Pumpkin Cookie Dough Recipe

Hi Speechies!

I was apprehensive about posting a recipe on this blog BUT let's be honest...grad school students can always use a cheap, healthy, sweet recipe in their lives right?! Plus who doesn't love a good pumpkin recipe, am I right? I got a lot of messages on Instagram requesting it so here we are:


Ingredients:
  • 1/2 cup pumpkin puree
  • 2 tablespoons of nut butter (I use almond butter)
  • 1 tablespoon of cacao nibs (or chocolate chips)
  • 1 scoop of protein powder (I use peanut butter cookie by PE Science)
  • 1/4 cup syrup 
  • 1/4 cup oat flour (I make my own - you can check it out in the video below)
  • Sprinkle of cinnamon and pumpkin pie spice

You're going to mix everything except the maple syrup in a bowl. Heat up the maple syrup in the microwave for 30 seconds. Add maple syrup to mixture. Put mixture in fridge to chill for an hour. Enjoy! 

I usually divide this recipe into 3 servings. I've kept it in the fridge for up to a week and it's still delicious!
